Gast also had an affect on Sephiroth as a child, though. He says 'Gast, why did you die?' as if it were painful for him. I think Sephiroth would have been a much different person before he lost it if Gast hadn't been around at all when he was a child. Gast also discovered and "identified" Jenova, so the project shouldn't have existed if Gast wasn't around.
Removing characters after the fact is a lot different than adding one in, I think. Everyone that play FF7 knows that Gast was there and that he was important to the story. Whereas Grimoire can come out of no where and be all right because we didn't see everything that was happening, we -did- see Gast present in game.
